Our veggie garden was an experiment over the Summer of 2012. It was something fun for me and the kids in our new house while Adam was gone on another deployment. I had no idea what I was doing and still consider myself a pretty clueless gardener. Our garden grew, we got a lot of sugar snap peas, some lettuce (before the - ugh - slugs took over), onions, a few cucumbers, and cherry and grape tomatoes. But the biggest success we had, by far, was that of our lone zucchini plant. We had a lot of duds that stopped growing at 4-6 inches, but if they made it beyond 6 inches, it was safe to say that they were going to be huge. Our biggest zucchini weighed in at 6.5 pounds and was a whopping 19 inches long and 14.5 inches around. So, of course, since it was the size of a small human baby, I had to do a mini-photo shoot before I hacked and shredded it to bits.
Cutting this thing up became quite the task. It was too big for my cutting board. First World Problem, I know. I shouldn't complain.
It made my biggest kitchen knife look like a toy.
Success! After I finally cut it in half, I had to hold it up for a comparison. My hands aren't freakishly small, this zucchini was just huge.
Shredding this beast took a long time. I'm a fan of zucchini bread and I had two very eager helpers. Well, they were eager at first...
Then they decided to taste it. And they wouldn't stop.
Lucas wanted to make sure Poppy had a good taste. Helpful brother. Gross, but helpful.
Yum.
Would you believe that after all of that ridiculous photo documentation of The Great Zucchini that I forgot to take pictures of the bread that we made!? Well, I did. No biggie, though. It was brown. It looked like bread. Our zucchini served us well! ;-)
